This simple oven roasted potato recipe can be easily modified by changing out the herbs to create a flavor profile that matches the rest of your meal. - 1.5 lbs red or yellow skinned potatoes, washed
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh rosemary
- 1 tablespoon fresh thyme
- Pink Himalayan Salt to taste
- Preheat oven to 425 degrees.
- Cut potatoes into evenly sized wedges or cubes about 1”
- Toss potatoes, olive oil, herbs, and salt in a bowl
- Place on a baking sheet lined with parchment paper
- Bake for 30-35 minutes until browned and tender
